Paleo Mexican Casserole



A flavorful and hearty Paleo Mexican Casserole featuring ground beef, vegetables, and spices, topped with fresh avocado and lettuce.

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 bell peppers, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes, drained
  • 1 cup salsa
  • 2 cups cauliflower rice
  • 1 cup sliced olives
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups shredded lettuce
  • 1 avocado, diced
  • Fresh cilantro, for garnish

Instructions:

Preheat the oven to 375F 190C

In a skillet, cook ground beef, onion, bell peppers, and garlic until beef is browned and vegetables are tender

Stir in diced tomatoes, salsa, cauliflower rice, olives, chili powder, cumin, salt, and pepper

Cook for 5 minutes, allowing flavors to meld

Transfer mixture to a casserole dish and spread evenly

Bake in the preheated oven for 25-30 minutes, until heated through and bubbly

Top with shredded lettuce, diced avocado, and fresh cilantro before serving
