Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can 28 oz crushed tomatoes
- 4 cups beef broth
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 cup cauliflower florets
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups spinach, chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
Instructions:
In a large skillet, heat olive oil over medium-high heat
Add ground beef and cook until browned, breaking it apart as it cooks
Add diced onion, carrots, celery, and minced garlic
Cook for 5 minutes until vegetables begin to soften
Transfer the cooked beef and vegetable mixture to the crockpot
Add crushed tomatoes, beef broth, zucchini, green beans, cauliflower, dried basil, dried oregano, dried thyme, salt, and pepper to the crockpot
Stir well to combine
Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender
About 30 minutes before serving, stir in chopped spinach and fresh parsley
Taste and adjust seasoning if needed
Serve hot, garnished with additional fresh parsley if desired
