Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- Yellow and green food coloring
- 24 mini chocolate chips
- 1 cup buttercream frosting
- Yellow and green decorative icing
Instructions:
Preheat your oven to 350F 175C and line a cupcake tin with paper liners
In a bowl, whisk together the flour, baking powder, and salt
In a separate bowl, cream together the softened butter and sugar until light and fluffy
Add the eggs, one at a time, beating well after each addition
Stir in the vanilla extract
Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients
Divide the cupcake batter into two bowls
Tint one bowl of batter with yellow food coloring and the other with green food coloring until you achieve the desired shades
Fill each cupcake liner with a spoonful of green batter, followed by a spoonful of yellow batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean
Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely
Once the cupcakes are cool, frost them with buttercream and use a mini chocolate chip as the center of the sunflower
Using green decorative icing, pipe leaves around the chocolate chip to complete the sunflower look
Serve and enjoy your sunflower cupcakes!
