Smoked Salmon & Egg Stuffed Avocados



Not only do these stuffed avocados taste great, but the smoked salmon and eggs inside them are also full of healthy omega-3s. It's a great breakfast or brunch option for people on the keto diet.

Ingredients:

  • 2 ripe avocados
  • 4 oz smoked salmon, thinly sliced
  • 4 eggs
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions:

Turn on your oven and heat it up to 375F 190C

Cut the avocados in half and take out the pits

Scoop out a little extra avocado with a spoon to make room for the eggs

To keep them steady, put the avocado halves in a baking dish

Carefully crack an egg into each half of the avocado, making sure the yolk stays whole

Add pepper and salt to taste

Put the slices of smoked salmon on top of the eggs

Put it in an oven that is already hot and bake for 15 to 20 minutes, or until the egg whites are set but the yolks are still creamy

Take it out of the oven and add fresh dill on top

Serve right away and enjoy!
