Cheesy Hummus and Veggie Panini



This Cheesy Hummus and Veggie Panini is a delicious and healthy sandwich option that's perfect for lunch or a quick dinner. The creamy hummus pairs wonderfully with the melted cheese and fresh vegetables, creating a satisfying and flavorful meal.

Ingredients:

  • 1/2 cup hummus
  • 4 slices of whole-grain bread
  • 1 cup shredded cheese your choice
  • 1/2 cup thinly sliced red bell pepper
  • 1/2 cup thinly sliced zucchini
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh spinach leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Preheat a panini press or grill pan

Lay out the four slices of bread on a clean surface

Spread an even layer of hummus on two of the bread slices

On the other two slices of bread, sprinkle the shredded cheese evenly

Top the hummus-covered slices with the sliced red bell pepper, zucchini, red onion, and fresh spinach leaves

Season with a pinch of salt and pepper

Place the cheese-covered slices of bread on top, creating two sandwiches

Brush the outside of the sandwiches with olive oil to ensure a crispy, golden crust

Place the sandwiches in the preheated panini press or grill pan and cook until the bread is toasted, and the cheese is melted usually about 3-4 minutes in a panini press or 2-3 minutes per side in a grill pan

Carefully remove the panini from the press or pan, let them cool for a minute, and then slice in half

Serve your Cheesy Hummus and Veggie Panini hot and enjoy!
