Slow Cooker Italian Breakfast Casserole



This Slow Cooker Italian Breakfast Casserole is a hearty and tasty dish that can feed a lot of people. With cheese, bacon, and vegetables, it's a tasty way to start the day!

Ingredients:

  • 8 slices bacon, cooked and crumbled
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup sliced mushrooms
  • 1 cup diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 10 large eggs
  • 1/2 cup milk
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Cooking spray

Instructions:

Cover the slow cooker with cooking spray

Add cooked bacon, bell peppers, onions, mushrooms, tomatoes, and mozzarella cheese to the slow cooker one layer at a time

Put eggs, milk, Italian seasoning, salt, and pepper in a bowl and mix them together with a whisk

Add the egg mixture to the slow cooker and mix it in

Turn the heat down to low, cover, and cook for 6 to 8 hours, or until the eggs are set

Enjoy while hot!
