Cajun Shrimp Foil Packs are an easy and tasty way to enjoy a seafood feast. With shrimp, potatoes, corn, bell peppers, and spicy Cajun spices, this dish is packed full of flavor and easy to clean up. It's cooked to perfection in individual foil packets.
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 cups baby red potatoes, quartered
- 1 cup corn kernels
- 1 bell pepper, sliced
- 1 onion, sliced
- 4 cloves garlic, minced
- 4 tablespoons Cajun seasoning
- 4 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
Turn on the oven and heat it up to 400F 200C
Cajun seasoning, olive oil, salt, pepper, bell pepper, onion, garlic, corn, potatoes, and shrimp should all be mixed together in a large bowl
Toss well to cover everything
Put equal amounts of the mixture on four large sheets of heavy-duty aluminum foil
To make packets, fold the foil over the mixture and seal it tightly
Put the foil packets on a baking sheet and heat the oven to 400F
Bake for 20 to 25 minutes, or until the potatoes are soft and the shrimp are pink and opaque
Carefully open the foil packets, add chopped parsley on top, and serve hot
